Recipes for Ground Turkey Meatballs

The difference between the two is whether or not I have Spinach & Parmesan Cheese and on hand.  I like to add spinach for additional nutritional benefits and flavor.  Just like any kind of meatball they are delicious served with pasta, as a sandwich, or by themselves. 

These super moist Recipes for Ground Turkey Meatballs are one of my family’s favorite meals.  It’s a meal we have at least twice a month.  It only takes 15 minutes to cook in the Pressure Cookers so I prep the ground turkey the night before so it makes for a quick after-work meal. 

What is Ground Turkey?

Ground Turkey is Turkey meat ground or minced.  Depending on the lean percentage Ground Turkey includes dark, light meat and skin.  Just like Ground Beef, Ground Turkey is available in different lean percentages. 

The difference is you will find Ground Turkey usually in a 95% lean 5% fat, for this recipe I used an 85% lean 15% fat because that is what I had.  I’ve also have made it with 95% lean 5% fat and it’s still moist and delicious.  

 

Is Ground Turkey Better Than Ground Beef?

In some ways, Ground Turkey is much better than Ground Beef, but it’s really a matter of opinion.  I enjoy them both very much but like to limit my red meat intake due to high cholesterol.  So, if you are watching your cholesterol, I would choose Ground Turkey over Ground Beef. 

Yes, Ground Turkey is a little healthier meat and can be used in burgers, tacos, chili, or meatballs.  Ground Turkey is lower in fat, high in protein, and low in calories.  Change it up and give these Recipes for Ground Turkey Meatballs a try. 

How to Cook Ground Turkey?

The leaner the meat the less fat it has to keep it moist. Ground Turkey must be cooked to an internal temperature of 165° for it to be fully cooked.  If you overcook Ground Turkey it will become dry, be sure to check the temperature with a cooking thermometer. 

Just like with Ground Beef don’t overwork it when forming the meatball or burgers.  The meat should be loosely holding itself together, if you form a firm meatball, it will become dense and dry, and we don’t want that to happen.

The benefit of cooking these Recipes for Ground Turkey Meatballs in the Pressure Cooker is it keeps the meatballs moist while cooking in the sauce. 

PRESSURE COOKER TIP:  Be sure to add 1 cup of water before adding in the pasta sauce and Turkey Meatballs.  If you don’t the Pressure Cooker will turn off if it starts to burn on the bottom.  I’ve made this mistake a couple of times and it’s not easy to clean the Pressure Cooker.

The Secret Behind Tender Turkey Meatballs

Ground Turkey or Ground Chicken can become tough and dry when using in meatballs.  The Secret Behind Tender Turkey Meatballs are:

  • Include finely chopped ingredients in the mixture.  Adding one or two of these ingredients will add space in between the meat and not allow it to get so firm.  Adding chopped ingredients like onions, grated cheese, parsley, spinach,  peppers, breadcrumbs, etc. 
  • When forming Turkey Meatballs go easy on them, you are just forming the shape. DO NOT roll them for too long or too tight they will turn out tough. 
  • Meatballs should be a little larger than a golf ball, or about 1 inch in size.

Ingredients

  • 1 lb Lean Ground Turkey 85% Lean - 15% Fat
  • 1 cup Onion Diced White, Yellow or Red
  • 1 large Egg
  • 3/4 cup Bread Crumbs Plain or Italian Style
  • 1 tbsp Garlic Powder
  • 1 tbsp Italian Seasoning
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 24 oz jar Pasta Sauce
  • 1 cup Water

Instructions

  • Place 1lb of vground turkey in a large mixing vowl,
  • Add in the egg, diced onion, bread crumbs, garlic powder, italian seasoning, salt and pepper a mix thoroughly.
  • Roll into golf ball sized meatballs. This should make between 12-15 meatballs.
  • Pour a cup of water into the pressure cooker first.
  • Pour 1 jar of the pasta sauce into the pressure cooker.
  • Add the meatballs on top of the sauce you just added.
  • Pour the second jar of the sauce over the meatballs.
  • Set the pressure cooker to meat/stew setting.
  • Set the timer for 15 minutes.

Ingredients

  • lbs Chicken Breast
  • 4 Flour Tortillas 6 to 8 inch work well
  • 4 tbsp Extra Virgin Olive Oil
  • 2 tbsp Fresh Lemon Juice
  • 1 ½ tsp Seasoned Salt
  • ½ tsp Paprika
  • 1 tsp Garlic Powder
  • 1 ½ Red, Yellow, or Green Pepper Mix the Peppers up for flavor - Medium in size
  • 1 ½ tsp Fresh or Dried Oregano
  • ½ Red Onion Sliced thin
  • ½ tsp Red Crushed Peppers Flakes (Optional)
  • ½ cup Mushrooms (Optional)

Instructions

  • Slice Chicken Breast in half to about 1 in thick, and then cut in long chicken strips
  • In a large bowl, whisk together 2 tbsp of Extra Virgin Olive Oil, 2 tbsp of Lemon Juice, Seasoning Salt, Oregano, Garlic Powder, Paprika, and Pepper. Add chicken strips to mixture and cover, refrigerate for 1 - 3 hours.
  • Cut Peppers and Onions into strip-like pieces.
  • In a large skillet add 2 tbsp of Extra Virgin Olive Oil, add in Peppers, Onions and Mushrooms. Saute for about 3 minutes until everything is tender.
  • Remove the Pepper, Onions, and Mushrooms from the pan and set them aside.
  • Place Chicken Stripes in the same skillet the Pepper, Onions, and Mushrooms were in.
  • Cook chicken for about 5 or 6 minutes or until each piece is fully cooked and slightly brown.
  • After the Chicken is fully cooked add back the Peppers, Onions, and Mushrooms to the skillet. Mix together and get everything hot, now you can add in the Red Crushed Peppers (optional).
  • Warm up the Tortillas in the microwave for about 10 seconds and you are ready to serve.

Today I’m going to share How to Cook a Rotisserie Chicken.  Rotisserie Chicken is simple to cook what makes it different it the seasoning that is used. 

In order to Cook a Rotisserie Chicken, we need to tie it up or Truss it first.  The reason why it’s good to truss a chicken is to ensure that the whole chicken cooks evenly.  I haven’t made a video for this yet, so I decided to share the Food Network video on How to Truss a Chicken!

Why I Love Cooking Rotisserie Chicken

Rotisserie Chicken is one of my family’s favorite meals and honestly as well as mine.  I keep an eye out on my local grocery stores for when they have whole chickens on sale.  It’s a delicious Sunday meal that we can guarantee leftovers for Monday.  I always love that. 

Making a Rotisserie Chicken at home doesn’t have to be intimidating, in reality, it’s simple to do.  When you truss the chicken, it holds all the juices and flavor inside the chicken. 

You end up with juicy flavorful meat inside and crunchy crispy skin on the outside.  The crunchy skin is my favorite part because that has all the seasoning. 

How do you know when a Rotisserie Chicken is Done?

The best way is to use an electronic food thermometer. Every kitchen should have a food thermometer to be sure food is cooked properly. 

When using a food thermometer make sure you place it in the thickest part of the meat.  The thickest part of a chicken is the chicken thigh.  A chicken’s internal temperature should be 165° F for it to be done.

Rotisserie Chicken w/Roasted Potatoes and Green Beans

Ingredients

  • 1 5-6 lb Whole Chicken
  • 6-8 Medium Sized Potatoes Cut into 1/2-inch wedges
  • 1 lb Fresh String Beans

Chicken Spices

  • 1/2 tbsp Garlic Powder
  • 1/2 tbsp Onion Powder
  • 1/2 tbsp Italian Seasoning
  • 1/2 tbsp Paprika
  • dash Salt & Pepper Fresh Ground

Potato Spices

  • 1/2 cup Water Needed for steam in the pressure cooker
  • 1/2 cup Red Onion Finely Chopped
  • 2 tbsp Butter Cut into small pieces
  • 1/2 tbsp Paprika
  • 1/2 tbsp Dried Oregano or Italian Seasoning
  • dash Salt & Pepper Fresh Ground
  • 1/2 cup Grated Pecorino Romano Cheese Or Grated Parmesan Cheese

Green Bean Spices

  • 1/4 cup Sliced Almonds
  • 2 tbsp Butter
  • 1/2 Garlic Clove Minced
  • 1 tbsp Grated Pecorino Romano Cheese Or Grated Parmesan Cheese

Instructions

Chicken

  • Combine all the Chicken spices listed above and rub all over the entire chicken.
  • Using kitchen string, tie down the legs and wings securely.
  • Put chicken into the Rotisserie and cook for approximately 15 mins per pound until the internal temperature reaches 170-175°F (76.7-79.4°C)

Potatoes

  • Pour 1/2 cup water into the pressure cooker. Use the steamer plate that comes with the pressure cooker and place it into the pressure cooker.
  • Combine all of the Potato spices listed above (except the grated cheese) and mix well onto the potato wedges. Place potato wedges into the Pressure Cooker onto the steamer plate.
  • Secure the lid to the Pressure Cooker and set the timer for 5 minutes.
  • Remove the potatoes and transfer to a serving plate.
  • Sprinkle with the potatoes with the grated cheese of your choice.

Green Beans

  • Place the fresh String Beans into the Steamer and cook for approximately 13-17 minutes.
  • In a separate pan, melt 2 tbsp of butter then add the minced garlic and cook for 1-2 minutes over low heat.
  • Add in the sliced almonds and cook for an additional 1-2 minutes.
  • Pour garlic seasoned butter mixture over the string beans and stir to coat them evenly.
  • Sprinkle with freshly grated Parmesan Cheese.

Chicken Cacciatore in Instant Pot

Chicken Cacciatore in Instant Pot is an appetizing version of the Italian Classic made easy and full of rich flavor. It’s a meal that can be made in one pot. 

If you’re pressed for time! This is a simple yet nutritious meal the whole family will enjoy.

The word “Cacciatore” means hunter in Italian. Which refers to a meal prepared “hunter-style” with onions, herbs, tomatoes, and often bell peppers.  Let’s not forget the wine!

The aroma that permeates in the air will have you watching the countdown on the digital timer on the Pressure Cooker with great anticipation for a delicious meal. Cooking this in the Pressure Cooker does two things, it makes the chicken tender and juicy and it only takes 30 minutes to cook. 

How to Make Chicken Cacciatore in Instant Pot?

Chop the peppers and onion into small pieces or into strips.  I used my Food Chopper which I love and makes for easy chopping.  Sauté the peppers and onions in the Pressure Cooker by choosing the sauté button but do not put the lid on. 

 

After peppers and onion are sauté add in the mushrooms and garlic and mix.  Mix the crushed tomatoes and tomato paste together in a small bowl.  Add the wine and chicken to the Pressure Cooker and pour tomato mixture on top of chicken. 

Place the lid on the Pressure Cooker and choose the Poultry button and change Pressure to Low. (check your Pressure Cooker manual to adjust level) Set time to 30 minutes.  

 

Italian Chicken Cacciatore is a comfort meal for me.  It’s tasty delicious and easy to make.  Everyone needs at least one classic Italian dish included in their recipe collection, and this is it!

What type of Chicken should you use?

Any kind!  I prefer breast meat, but you can use any part of the chicken you enjoy the most.  Chicken wings, thighs, drumsticks, or breast all will work with this recipe. It’s best if you remove the skin from the chicken first before you cook it.  It will decrease the amount of grease and oil in the dish.

  • In the pressure cooker add 2 tbsp. of olive oil and sauté the peppers and onions.
  • After the peppers and onions are softened, add the white wine.
  • Add the mushrooms and garlic stirring occasionally.
  • Add the chicken pieces on top of the other ingredients and then cover the chicken with the tomato mixture
  • Set the timer on the pressure cooker to 30 minutes.

I have made my Easy Shredded Chicken Sandwiches in the Pressure Cookers for years.  It’s a meal that can be eaten in many ways.  You can make sandwiches, wraps, on salads, or make slider sandwiches for parties.

If hosting a party make Easy Shredded Chicken Sliders as a Finger Food and you will be glad you did.  They are super easy to make, which will give you more time with your guest.  

How to Make Shred Chicken Sandwiches?

Easy Shredded Chicken Sandwiches are one of the easiest meals to make and feeds a lot of people.  By using the Pressure Cooker, it only takes 30 minutes instead of 5 to 7 hours in a Slow Cooker.  

I use Boneless Chicken Breast, but you can use any kind of chicken you like. When using chicken thighs or chicken breast on the bone you’ll have to take the meat off the bone.  Add your favorite BBQ Sauce and seasoning and that is it.  It’s That Simple. 

Cooking with the Pressure Cooker the Chicken comes out so tender and juicy.  It easily falls apart but use a spoon or forks to shred it into pieces.


When Should you Make Shredded Chicken Sandwiches?

Easy Shredded Chicken Sandwiches is a meal that can be made for one person or a large group.  It all depends on how many pieces of chicken you cook. 

We used four pieces of chicken and we still had leftovers for the next day. When making it for a party just increase the number of pieces of chicken.

Meals made in the Pressure Cooker or Slow Cooker stay warm until you’re ready to serve.  Which is great when making this meal for a large group or a party so you can focus on having fun. 

Additional Flavor to Shredded Chicken Sandwiches

Try this quick Classic Italian-American Chicken Marsala Mushrooms Recipe dish tonight.   It’s super easy and doesn’t take a lot of prep time.

Grab a Campbell’s Sauces Skillet Chicken Marsala package at the grocery store. It was in the gravy and sauce aisle at my local store. One night I was pressed for time trying to figure out what to make for dinner.

Have you ever had one of those nights?   I figured why not give it a try and I was happy I did. 

All the flavor of Chicken Marsala in one package and in a lot less time. Forget about the planning and multiple ingredients or a messy kitchen for this tasty meal.

 

Just add chicken and more mushrooms and onions and no one will know it was right out of the packet.  This will be your family’s next favorite meal and easy one for you to make.

Quick Easy Chicken Marsala Mushrooms Recipe

The simplest way to cook Chicken Marsala Mushrooms Recipe is in a Pressure Cooker.  Just put Boneless Chicken Breast into the pot add in Campbell’s Sauces Skillet Chicken Marsala package.  Add in ½ cup of Water and lock the lid and cook for 30 minutes.   Dinner is ready!  

Add rice, pasta, or egg noodles and you have a completely delicious meal.  Make a side of vegetables if you like.  Sounds Yummy Right!!

Marsala wine is a cooking wine that can be either dry or sweet.  Look on the label of the bottle and it will say that it’s a Cooking Wine. You usually use Marsala for meals that have ingredients like onions and mushrooms.

There is a Marsala Wine that you drink that is delicious. The Marsala wine is fortified from the West section of Sicily and usually has distilled spirit, usually brandy.  Marsala Wine creates a rich caramelized sauce.

 

How Long can Chicken Marsala Last in Refrigerator?

According to the USDA (United States Department of Agriculture), chicken that is cooked in gravy or broth can last 3 to 4 days in the refrigerator.  As long as it’s kept in an airtight container and not left out longer than 2 hours after cooking. 

Chicken Marsala can last in the freezer for up to 2 or 3 months in an airtight freezer container.  This is great for another night’s meal if you’re not in the mood to cook like I am sometimes.

Boneless Chicken Breast and Shrimp have different cooking times so put the chicken in the steamer first and on the bottom.  Cook chicken for about 32 minutes then put Shrimp in for the last 3 minutes.

The Shrimp only takes about 3 minutes to cook, you don’t want to overcook it.  When shrimp is overcooked, it gets chewy and that won’t be good!  

Best of all, this meal is high in protein and low in calories!  So if you are trying to stay fit or lose weight this is a great healthy low-calorie meal.

Since Chicken is a healthy and high protein, we tend to eat more of it, and sometimes it can get boring.  But if the chicken is steamed you can spice it up any way you like, and the flavors will not be lost during cooking. 


This delicious meal comes together in 35 minutes and only using one gadget to clean up.  It’s also cost affected meal the whole family can enjoy at home. 

We used boneless chicken but if you like wings or thighs they will also be delicious. The possibilities are endless when it comes to chicken.

Chicken and Shrimp

Steamed Chicken & Shrimp

Ingredients

  • 4 pieces Boneless Chicken Breast
  • 12 ounces Shrimp PreCooked and medium size
  • 1 tsp Garlic salt
  • 1 tsp Paprika
  • 1 tsp Italian Seasoning

Instructions

  • Trim the Boneless Chicken Breast of excess fat.
  • Season with garlic salt, paprika, and Italian seasoning.
  • Place into bottom steaming tray and set the timer for 35 minutes.
  • If you have pre-cooked shrimp wait until the timer gets down to 3 minutes left for the chicken and add the shrimp to the top tray and cover.
  • After the final 3 minutes are up, make sure the chicken is fully cooked reaching an internal temperature of 165 degrees.

Wing Spices

Instructions

  • Coat the Chicken Wings with the wing spices listed above
  • Pour water in pressure cooker first so the wings are less likely to stick to the bottom
  • Place coated Chicken Wings in Pressure Cooker
  • Press the Chicken/Meat button and set the timer for 15 minutes
  • Remove wings from pressure cooker and place on a cookie sheet
  • Brush your favorite wing sauce or BBQ sauce on each wing coating it generously
  • Place in a preheated oven at 400°F and bake for 5-7 minutes so the sauce forms a nice glaze

  • pkg Chicken Tenders Remove the tendons from the chicken tenders
  • 2-1/2 cups Chicken Broth Use Organic Chicken Broth for more flavor
  • 2 cups Egg Noodles
  • 1-1/2 cups Carrots Sliced into round pieces
  • 1-1/2 cups Celery Sliced
  • 1-1/2 cups Onion Chopped into quarters
  • 2 cloves Garlic Chopped
  • 1-1/2 cups Chopped Spinach Or substitute Chopped Escarole
  • 1 tbsp Poultry Seasoning
  • 1 tbsp Pink Himalayan Sea Salt Or Salt of your choice
  • 1 tbsp Ground Pepper

Instructions

  • Place Chicken Tenders in the Pressure Cooker first
  • Add in 2 cups of Egg Noodles
  • Pour in 2-1/2 cups of Organic Chicken Broth
  • Next, add the Sliced Carrots, Celery, Onion, and Chopped Spinach

Chicken Bacon Ranch with Pasta in 5 Easy Steps

This delicious recipe is great for a Sunday dinner that you will enjoy leftovers on Monday night.  It’s Chicken Bacon Ranch with Pasta in 5 Easy Steps. 

It’s a dinner your whole family will love. It’s also great for large gatherings such as a  Sunday afternoon Football game fans.  It’s inexpensive and goes a long way.

This totally creamy, cheesy, and loaded with chicken, bacon, and ranch dressing recipe has my three favorite foods.  Cheese, Chicken, and Bacon!  

I work hard all week so Sunday nights are when I like to make a big meal for my family.  This is the night I would make Meatballs, Chili, and or Casserole Dish.  These types of meals make for yummy leftovers.  

Chicken Bacon Ranch with Pasta Step by Step

Step One:  Cook Pasta – You can use whatever pasta you have on hand or you can use Egg Noodles they work just as well.  Place in a 9 x 13-inch Casserole Dish. 

 

Step Two:  Chop Onions – I like to use my Food Chopper because makes all the pieces the same size. 

Step Three: Make Creamy Sauce – Saute Onions in oil then stir in the Milk, Cream Cheese, and Ranch Dressing for a Cheesy Heaven.

Step Four: Mix Together – Pour Creamy Cheesy Sauce over the Pasta and add in the Frozen Sweet Peas, Bacon, and Chicken. 

Step Five: Add Topping & Bake – Top with Melted Butter, Panko Bread Crumbs, and Ranch Dressing.  Cook until the top is crispy and cheesy which is about 20 minutes. 

Oppss!  Step Six:  Serve and Enjoy 🙂

 

Tips for Substitutions

  • Instead of Canned White Chunk Chicken Breast, you could use leftover Chicken from the Oven Rotisserie Chicken Recipe instead of Canned Chicken Breast.  Just cut up into small bite-size pieces.  
  • Replace Frozen Sweet Peas with another vegetable such as Broccoli, Green Beans, or even Sweet Corn they are all delicious.
  • Using Egg Noodles gives this meal a little different flavor but still very yummy.   
  • For a less creamer sauce, you could use 2 cups of Chicken Broth instead of the Milk.  

 

Storing Leftover Chicken Bacon and Ranch Pasta

Store leftovers in an airtight container in the refrigerator for 3 to 4 days.  If you don’t have a casserole dish with a lid, wrap with both plastic wrap and aluminum foil to prevent from spoiling.

  • 12 oz Any kind of Pasta
  • 2 tsp Oil
  • 1/2 cup Diced Onions

  • 6 oz Cream Cheese
  • 3 tbsp Ranch Dressing
  • 12.5 oz Canned White Chunk Chicken Breast
  • 1/4 cup Bacon Bites Or 6 Slices of Bacon Broken into pieces
  • 1 cup Frozen Sweet Peas

Topping

  • 1 tbsp Butter
  • 1 1/2 cups Panko Bread Crumbs
  • Sprinkle with Fresh Chopped Parsley (Optional)

Instructions

Chicken Bacon and Ranch Pasta

  • Preheat oven to 375°F lightly grease a 9 x 13-inch casserole dish
  • Cook Pasta and in saltwater and follow cook time per package; drain and place in a large bowl
  • Chop Onions into small pieces and heat oil in a skillet and saute onions until tender
  • Add milk and cream cheese to skillet and stir until creamy
  • Mix in 2 tablespoons of Ranch Dressing to skillet combine together
  • Pour mixture over Pasta and fold in Canned White Chunk Chicken Breast and Frozen Sweet Peas
  • Add Bacon Bite and mix together with the Pasta and Chicken Breast
  • Spread out the mixture into a 9 x 13-inch casserole dish

Topping

  • Melt 1 tablespoon of Butter in the microwave for about 10 seconds
  • In a small bowl mix together Melted Butter, Panko Bread Crumbs and 1 tablespoon of Ranch Dressing
  • Pour the mixture over the Pasta and Chicken Breast mix in a casserole dish
  • Bake for about 20 minutes until the top is crispy and Cheddar Cheese is melted
  • Let stand for 5 minutes before digging in, Top with Parsley and Serve

 

Barbecue Chicken Quarters

Want to make delicious Barbecue Chicken Quarters without firing up the grill? By using any type of Rotisserie Oven, you will get crispy skin and moist chicken inside just like you would if you cooked it on a grill. 

 

When planning meals for the week on a budget I will opt for a Chicken Quarters vs Boneless Chicken Breast. Chichen Quarters are the least expensive part of the Chicken to purchase.  The average national cost is about $0.89 cents per pound. 

The cost per pound is cheaper because it takes less time for the butcher to cut. There is not time cutting out the bones and off the fat.  Chicken Quarters are extremely flavorful since you get a drumstick and thigh dark meat.  

 

How to Cook Barbecue Chicken Quarters In a Rotisserie

We used our favorite Showtime Rotisserie for this meal which didn’t take a whole lot of time to prep. The food basket that comes with the Rotisserie Oven is used to hold the Chicken Quarters while cooking. Depending on how large the Quarters are, you can easily fit 3-4 pieces inside the basket.

Chicken Parmesan Recipe Baked using Cooper Chef

This is a Chicken Parmesan Recipe Baked without breadcrumbs. Yes, traditional Chicken Parmesan has breading on the chicken, but we wanted to make this a healthier meal.

There is no frying in oil with this Chicken Parmesan Recipe since there are is no breading.  We wanted all the great taste but without the added calories. 

We made our own homemade sauce but you can easily use jar sauce for this recipe. 

As you’ll see in the video below we used the Copper Chef Pan which can be used on the stove and oven.  Which also makes for simple clean-up.

Ingredients

  • 2 pcs Boneless Chicken Breast Trim any excess fat
  • 1 28oz can Whole Peeled Tomatoes Pulse in a food processor to desired thickness
  • 1/2 box Pasta of your choice Angel Hair Pasta goes nicely with this dish
  • 1 cup Shredded Mozzarella Cheese Thicker Shredded cut

Spices for the Chicken

  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/2 tsp Italian Seasoning
  • 1 tbsp Extra Virgin Olive Oil

Spices for the Sauce

  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/2 tsp Italian Seasoning
  • 1 tbsp Parmesan cheese
  • 1 tbsp Sugar To cut the acidity of the tomatoes

Instructions

  • Trim any excess fat from the chicken and wash off the chicken.
  • Place the boneless chicken in a round bowl and add all the chicken spices listed above. Mix and coat well.
  • Pre-heat the Copper Chef Pan for about 5 minutes.
  • Add the chicken to the Copper Chef Pan and brown both sides for approximately 10 minutes. Take off the burner and set aside.
  • Pulse the whole tomatoes in a food processor to desired thickness
  • Add all the sauce spices listed above to the tomatoes and stir well.
  • Pour sauce mixture over the chicken in the Copper Chef Pan evenly.
  • Place in the oven at 375 degrees and cook for 20 minutes.
  • After 20 minutes of cooking in the oven, make sure the internal temperature reaches 165 degrees. The Digital Instant Read Meat Thermometer is a nice gadget to keep handy.
  • Cover chicken pieces with shredded mozzarella cheese. Put back in the oven and cook for another 5 minutes or until the mozzarella cheese melts evenly.

Making Delicious Crispy Chicken at Home!!

You can make delicious, juicy, tender, and Crispy Chicken right in your kitchen without deep frying.  When you use a Rotisserie Oven to cook a whole chicken it’s also a healthy delicious meal that the whole family will enjoy.

This meal might take some time to cook but it’s well worth the wait.  I own the Ronco Showtime Large Capacity Rotisserie Rotisserie Oven and have used it for years.

Rotisserie Ovens cook slowly and evenly making your Chicken moist flavorful meat that is nicely golden brown with crispy skin.  It’s Crispy Crunchy Chicken on the outside and tender and moist on the inside. 

Make sure to check the internal temperature of the chicken before removing it from the Rotisserie Oven.  The internal temperature for chicken should be 165 °. If you don’t have a meat thermometer be sure to get yourself one, they are well worth it.

I have the Powlaken Instant Read Meat Thermometer and it’s wonderful because it is waterproof.  The last meat thermometer I owned was not waterproof and I had to be careful every time I cleaned it.  


Containing both dark and lean white meat, a whole roasted chicken makes an excellent dinner for all taste buds.  While some enjoy the flavorful dark meat and others prefer the lean white breast, most will agree they really look forward to the delicious crispy skin.  

 

How to Truss a Whole Chicken for Rotisserie Oven

The easiest way I found to Truss a Whole Chicken for the Rotisserie Oven was through a video on chefsteps.com.  They provide step-by-step instructions with pictures and a video.  So be sure to check them out.  I am by no means an expert at Trussing a Whole Chicken yet, but I am going to keep practicing.  Good Luck to you as well.  Have Fun with it.

Crispy Chicken

Healthy Crispy Chicken Dinner

Ingredients

  • 6-7 lb Whole Chicken
  • 1 tsp Garlic Powder
  • 1 tsp Dried Oregano or Italian Seasoning

Instructions

  • Use cooking strings to tie together the legs and wings
  • Combine all dried seasonings and rub onto chicken covering it evenly
  • Carefully insert the rotisserie spit rods from one end of the chicken through the other end
  • Place chicken into the rotisserie and cook for 15 minutes per pound and internal temperature reaches 165°
  • Carefully remove the chicken from the rotisserie and cut off all the cooking strings. The legs and wings should easily pull apart.
